Tempura restaurant Tenmura [Kanazawa Biyori]

Deep-frying selected Japanese ingredients creates a unique dish

It is one of the few tempura specialty shops in Kanazawa, and has a strong following both within and outside the prefecture. The owner goes to the market every morning to carefully select seasonal seafood and vegetables. He has a particular passion for vegetables, such as Kanazawa's Kaga lotus root and Kumamoto's red eggplant, and seeks to "bring out the flavor and texture even more by frying them." He also visits producers and makes requests such as "Can you grow this vegetable at home?"
